Key Lime Pie

I made the Key Lime Pie mix from Wind and Willow tonight. It is easy and fast to make - less than 30 minutes. Mix the bag with the key lime ingredients with 8 oz. of cream cheese, 8 oz. of whipped topping (I used Cool Whip) and 4 Tbl spoons of semi-melted butter. After mixing I put the mixture in a store bought graham cracker pie crust. Then I sprinkled the package of graham bits on top of the pie and put in the refrigerator until ready to eat.

We thought the pie was a creamy pie with a light to medium taste of lime. It could have had a stronger lime taste for our liking. It might be improved by adding slices of lime on the top of the pie.

We would give the pie a rating of 6 on a 1-10 scale. Mainly it is a fast and easy dessert for a family meal at dinner or afterwards.

The mix has several recipes available that we have not tried yet. The Key Lime Pie would be a nice appetizer or snack to serve on graham crackers, cookies or a variety of fruit.
